Day 1
Arrival in Fez

Day 2
Fez Medina and Traditional Craft Workshops
A guided morning through Fez el-Bali visiting the 14th-century Bou Inania Madrasa, the Al-Qarawiyyin University (founded 859 AD by Fatima al-Fihri β the world's oldest continuously operating university), and the Nejjarine woodworking museum. View the Chouara Tanneries from a rooftop terrace β the city's oldest tannery, in operation since the 11th century, where workers stand barefoot in honeycomb stone vats dyeing leather using saffron (yellow), poppy (red), indigo (blue), and henna (brown). In the afternoon, step inside an active Fassi pottery workshop in the Adwa Seghira quarter, where Fez's distinctive blue-and-white pottery is produced using cobalt oxide glazes and wood-fired kilns. Day 4
Moroccan Cooking Class and Berber Village
Begin with a morning visit to a local spice market to select the day's ingredients β ras el hanout (a blend of up to 35 spices), saffron threads, preserved lemons, and fresh herbs. In a traditional riad kitchen, learn to prepare a full Moroccan meal: a slow-cooked chicken tagine with preserved lemons and olives, hand-rolled couscous with seven vegetables, and the iconic pastilla β a flaky pastry of pigeon (or chicken) with almonds, cinnamon, and icing sugar, a medieval Andalusian recipe still made in Fez today. Day 5
Middle Atlas Mountains and Berber Culture

Continue to Azrou's ancient cedar forest, where wild Barbary macaques β the only primates indigenous to Africa north of the Sahara β inhabit the trees and often approach roadside visitors. Share a traditional Berber lunch at a local mountain family home: flat barley bread, amlou (a paste of roasted almonds, argan oil, and honey unique to the Berber kitchen), preserved olives, and rounds of mint tea. Day 6
Volubilis Roman Ruins and Imperial Meknes
Drive to Volubilis, Morocco's finest Roman archaeological site and a UNESCO World Heritage landmark. With a local specialist guide, walk among remarkably intact mosaic floors β the Labors of Hercules, Bacchus and the Four Seasons, Orpheus charming wild animals β a triumphal arch erected in 217 AD for Emperor Caracalla, and Capitoline temples once housing the cults of Jupiter, Juno, and Minerva. Volubilis served as the western capital of the Roman province of Mauretania Tingitana, housing 20,000 inhabitants and producing olive oil and grain for Rome at its 3rd-century peak. Day 7

A leisurely farewell breakfast in your riad courtyard: msemen (flaky Moroccan pancakes), honey, amlou, and fresh-squeezed orange juice. Before your transfer, take a final walk through the medina lanes β the Kissaria textile market, the perfumers' quarter with its towers of dried rose petals and oud resin, or a last coffee in a rooftop cafe overlooking the minarets.
