Your guide meets you at your hotel or riad and enters the medina through Bab Bou Jeloud — the 1913 gateway whose blue zellige faces the medina and green faces the city, following the colours of Fez's two patron saints. Navigate the main artery of Talaa Kebira past brass-beaters, spice merchants, and wood carvers. Visit the Bou Inania Madrasa — its carved cedarwood screens, painted stucco muqarnas, and zellige tilework reflected in the central ablution basin represent the pinnacle of Marinid craftsmanship. Continue to Al-Qarawiyyin University (founded 859 AD by Fatima al-Fihri — recognised by UNESCO and the Guinness Book of Records as the world's oldest continuously operating degree-granting institution). View the Chouara Tanneries from a rooftop terrace overlooking the ancient honeycomb dye vats — saffron yellow, poppy red, and indigo blue — where hides are still processed entirely by hand using pigeon-dropping and natural-dye techniques unchanged for a millennium.
