Your driver meets you at Fez–Saïss Airport and transfers you directly to your riad in the heart of Fez el-Bali — a UNESCO World Heritage medina whose street plan has not changed since the 9th century. After settling in, your guide leads a relaxed first walk through the Bab Boujloud quarter: the blue-tiled gate, the main artery of Talaa Kebira, a first glimpse of the medina's scale and sensory depth. In the evening, your private hammam session begins. The traditional sequence — black beldi soap applied across the whole body, the kessa glove working in slow firm circles to lift weeks of accumulated skin, rhassoul clay from the Atlas applied as a mask, then a rinse and an argan oil massage — takes around ninety minutes. You leave loose-limbed and entirely still.

The Living Medina — Al-Qarawiyyin, Tanneries & Zellige Workshop

A full day inside Fez el-Bali with your licensed local guide. The morning begins at Al-Qarawiyyin — founded in 859 AD, the oldest continuously operating university on earth, its courtyard a masterpiece of Marinid geometry in carved stucco, cedar, and glazed tile. Continue to the Bou Inania madrasa: soaring carved plasterwork screens, a cedar ceiling inlaid with copper, and the only madrasa in Morocco still used for Friday prayers. At the Chouara Tanneries, viewed from a rooftop terrace above the stone vats, you watch hides being dyed by hand exactly as they have been for over a thousand years. The afternoon is given entirely to the zellige workshop: a master craftsman inside the medina shows you the process of hand-cutting the small ceramic polygons that tile Morocco's greatest monuments. Cooking Class, Bou Jeloud Garden & Rooftop Sunset

The morning is devoted to a private Moroccan cooking class in the riad kitchen: your guide and host walk you through a Fez market first — choosing live herbs, preserved lemons, saffron, and ras el hanout from the spice vendors in the covered souk. Back at the riad, you prepare a full traditional meal: a slow-cooked tagine, couscous dressed with caramelised onion and raisins, a fresh tomato and herb salad, and Moroccan mint tea brewed over coals. You eat what you cook. The afternoon is yours: wander through the Andalusian Quarter on the east bank of the Fez River, find the Bou Jeloud gardens for an hour of shade and birdsong, or simply sit in the riad courtyard with a book. At sunset, your guide takes you to a rooftop terrace above the old city for the evening call to prayer and the last light moving across the minarets — one of the great free spectacles in the world.

Morning Medina Walk & Departure

A final morning in Fez el-Bali at a pace that suits you. Your guide leads an optional sunrise walk through the empty early-morning medina — before the vendors open, before the donkey carts begin their deliveries, the alleyways belong entirely to light and sound. Breakfast at the riad, then a private transfer to Fez–Saïss Airport or your onward accommodation. End of retreat.
